So I completely bounced off paleontology when they introduced it, as my character has very little interest in paleontology or University research and has only very grudgingly involved himself with either – and, at the time, it was both resource-intensive (while requiring resources available outside the usual channels, meaning grind), complex, and full of hidden options. Over time, it’s become obvious that this sort of content (and the, um, alternate-carousel resources provided and needed) is the way forward, so I’m going to need to actually make an effort.
So can someone sum this up for me: what’s the point? What on Earth am I actually trying to do in the Bone Market, and why should I care?

I’m finding it useful for the new Railway content; I’m using the Bone Market to effectively grind perfumed gunpowder, in order to increase my laboratory, in order to be able to make railway steel, in order to continue building my railway. It’s all interconnected, by the seems of it (and I’ve not yet found an easier way), but because it’s all so intensive, it’s provided a fun challenge that’s lasting a few weeks (as opposed to a few days at most for earlier content). It also seems like a good means for other rarer items, too.
Build specific skeleton to get resources you need for cutting edge content. Look at two tables on wiki (bones and buyers) to check what stats your skeleton should have and what bones you need for that.
Or you can ignore skeletons and get those resources by other means. There is always alternative (slower and less fun) way.

Well, if you want to stay in london, you can mostly ignore the lab and the bone market. For the railway (and some stuff hidden there like raising the dangerous and persuation cap) you will most likeley need to use both.
It requires some initial grinding to get the necessary new material and some time in the wiki to figure out how it works, but if you want to see the new content, the bone market is worth it.
Besides that, there are alot of small text snippeds to be found. To give an example: “Your skeleton could now walk while doing gratuitous side-kicks.” (adding the 3. Leg to your Skeleton)
