I’m coming back to Fallen London after a long time. I still get my earnest of payment, but I don’t have the option to write letters in my lodgings to quit and get a new profession. Is that still done? How do I do that now, if so?

The old Lodgings content has been split threeways - there’s now Your Lodgings, Your Social Engagements and Your Activities.
You can Resign from Your Profession under Send a Message to a Contact in Your Social Engagements.
Professions are totally still a thing - and there has been content added for the Tier 3 Professions! If you have one of those, you should find a storylet or card somewhere that unlocks a short storyline after which you’ll find The Business of a [Your Profession] under Your Activities.
