Any tips on where a new zee captain might chance upon a live specimen?

You can sometimes find them in the belly of a beastie, and there's an Explore event that will give you an option to capture or kill a beast.
If you have decent Pages (or are willing to reload until the RNG cooperates) probably the most reliable place is Whither; the second-last riddle option will give you a live specimen.
