Question about profession items

I am currently a rat-catcher and will be for some time, but what happens if i leave the profession and do another one? Will i lose the ratting piece or do i keep it?

You will lose it. Profession items are only given to you while you are in that profession.

Thanks though. The gun you get i think will last me a while so i'll keep it. Now i just need to find a good pair of boots for watchful.

There are only two boots for watchful, unfortunately. One you get from the Watchful Benefactor. The other was a pair of Meticulously Modified Stockings, which was a holiday Advent Calendar item. I have no idea if the latter will become available again next holiday or not.
