This is my first time through the loop, and I've already acquired turncoat two by mis-clicking and then correcting the error. Now I am at the Duchess's Salon (so not so very far along), with the opportunity to steer the conversation to either of two Masters. Query whether the selection will increase Turncoat if I pick the wrong Master, or are both conversations neutral in this?

You won't get turncoat menace CP regardless of your choice of Master according to the wikia.

I looked at that before I asked, as it happened. But because it didn't specify that no turncoat would result from a choice, I wanted to mak siccar. Having to kill the Turncoat quality would be annoying, especially because I had no idea I would get it (I try to enter new content relatively blind, to increase the charm).

No, you can't lock yourself from the carousel, but not sure if you can switch sides as one is bit more profitable than the other.

The carousel remains and you can switch sides anytime.

Switching sides gives you the Turncoat menace, though, which can be costly to get rid of once it hits 4.
