The purchase in bulk is definitely quick if you've already got the romantic notions, but intentionally grinding notions to trade for wine isn't especially worthwhile.

If you're not in a rush, you can use the A Merry Sort of Crime card to grind honey at 100 per action. That should make it quite a bit more efficient.

You can't stockpile them. But you can switch your profession before using them.
That is, you can receive you Earnest of Payment from Time the Healer, switch profession, and then claim your new profession's rewards. You have all week to change professions until the next visit of TtH.
