Regarding the infernal liquors "amanita sherry" and "muscaria brandy", amanita is a genus of poisonous mushrooms and muscaria is a species within that genus which is only somewhat poisonous, and is also hallucinogenic. So it that all infernal liquor is, spirits made from poisonous mushrooms? Or do they also have souls mixed into them?

They're just poisonous mushroom liquors. Humans can't drink Amanita Sherry without dying horribly, but people have been known to sip Muscaria at Mahogany Hall.

It's poisonous mushroom wine. That's all. I doubt devils would use souls to whip up a cocktail, though that would be quite an interesting little concoction. I could see pentecost apes doing something like that. edited by Addis Rook on 11/26/2016

Lacer disolves souls. You could make a brew of wine and lacer, and then that might still disolve souls for a really unusual brew...
