I wonder if we can choose to be addressed as Captain, Zailor, Governer, Ambassador, Showman etc....

What a delightful news! I really like the concept of professions/completed storylines unlocking new titles: it's like being recognized for the deeds you accomplished in game. Makes the setting feel more alive.
On the other hand, I'm also part of the supporters of the "er, yes" pronoun; it's always hilarious when a serious npc stutters it in the middle of an important conversation. Inappropriate, yes, but hilarious. I hope it can remain as an optional choice.
