So I'm still not entirely clear if using the unsigned message to upgrade profession will use up some of my notability.

Maintaining a controlling interest in my soul requires a pretty constant negotiation between the various shareholder interests. Thankfully the Fingerkings 23% control makes a pretty good foil to unite the other factions enough to get to 51%.

If you're upgrading to one of the 5-notability professions (which is the final tier), then I believe the answer is no. =) Sestina just did this recently, advancing from Author to Correspondent.
I am not sure about the 2-notability professions. Those are from the Unsigned Message too, aren't they? (I'm not sure because Sestina went from Journalist to Author via another route).
