I'm considering purchasing an Exceptional Friendship however I don't have a ton of spare time to play the game. If the subscription expires before I am able to finish a long-running story will I have to renew it or will the storylets still be available to me until completion?

As long as you've started the story in the House of Chimes the story will remain for you to finish whenever you're able.

Note that you must start the story in the house of chimes- the preview does not qualify. This is probably obvious, but worth clarifying.
