I don't know much about the Stone Pigs or what they are, but I do know this:
To put it into perspective, [spoiler]the Masters of the Bazaar have an evacuation plan in case the Stone Pigs wake up.[/spoiler]

Sunless Sea spoilers:
[spoiler]The Stone Pigs are basically engines that the Bazaar uses to fly around space. They're kept sedated because their waking would burn up London and tons of other stuff. That's why their "cough" in the card is what it is.[/spoiler]
