So instead of becoming Jack I followed the trail to Polythreme, is there a set of actions I’ll be able to take that will allow me to become Jack later? Replay this story in any way?

No, you can’t become Jack after you go to Polytherme. When you’re done with the storyline you can reset it but it costs fate (30 I think). Hope my answer helps.

You can restart the story after you finish it(the storylet to restart it will appear in your lodging when you finish it).
